Persistence is Utile VIII x LOT61 | Imperial Coffee Stout multipack The nose is greeted withThe 8th edition of our Imperial Coffee Stout series 'Persistence Is Utile', sees us team up with coffeemasters LOT61 from Amsterdam. Weve incorporated 40kg of Yunnan Red Sparrow beans, which underwent a thermal shock process, which sees coffee cherries undergo high heat, then immediate cold cooling. The dramatic temperature shifts create a stress response in the bean, resulting in intense, complex and fruity notes. This is then seamlessly blended with
