Season the shoulder with salt, pepper, rosemary and garlic. Place in a covered roasting dish or cover with foil. Roast in a preheated oven for 20 mins at 200c then turn down to 150c and slow roast for a further 4hrs. Absolutely delicious. Approximate weight 2. 5 3kg Serves 8 adults.
